Vin de Pays d'Oc

SITUATION
Domaine Astruc consists of 50 hectares on the "Coteaux Limouxin" of which 11 hectares are within the Limoux Appellation d'Origine Controlée and the other 39 hectares within the Vin de Pays d'Oc Appellation. The estate is planted with Chardonnay, Mauzac, Chenin, Viognier, Sauvignon, Cabernet, Merlot, Syrah, Pinot Noir and Malbec. It has built its reputation thanks to its unique soils and climate. Since 1802, Domaine Astruc has been renowned for the quality of its wines.

SOIL & VINEYARD
Mainly Gravel and clayed/Limestone soils.
12 to 25 years old vines. The vineyard is trellised. Guyot Double pruning.

BLEND
100% Syrah

AVERAGE YIELD
38 Hl per hectare.

VINIFICATION
After pick-up the grapes are brought to the winery.
Fermentation is done at 30 degree maximum on the first day and at 25°C for the next 4 days.
After fermentation, maceration lasted for 26 days at 25°C maxi with daily pumping over.
After maceration, the wine is very softly pressed with pneumatic press.
The first pressings have been re-blended with the free run wine. 50% of the blend is then put in oak barrels.

AGEING
The blend is aged in oak barrels, 35% American oak (new oak and 2 wines), 65% in French Oak (1 to 2 wines). The oak ageing lasts for 7 months.

TASTING NOTES
Colour: Intense Deep purple colour.
Nose: At first spices, leather and violette flower. The second nose develops blackcurrant and toasted notes.
Mouth: Full-bodied. Soft tannins. Ripe and floral flavours, liquorice. Long finish.

FOOD & WINE
Best served at 17° C.
Will go well with game, meat pies and grilled red meat, beef stews, Medium flavour and hard cheeses.
