SITUATION
Domaine Astruc consists of 50 hectares on the "Coteaux Limouxin" of which 11 hectares are within the Limoux Appellation d'Origine Controlee and the other 39 hectares within the Vin de Pays d'Oc Appellation. The estate is planted with Chardonnay, Mauzac, Chenin, Viognier, Sauvignon, Cabernet, Merlot, Syrah, Pinot Noir and Malbec. It has built its reputation thanks to its unique soils and climate. Since 1802, Domaine Astruc has been renowned for the quality of its wines.

BLEND
100% Merlot

SOILS AND CLIMATE
Clayed and chalky with gravels. 46 years old average.

AVERAGE YIELD
52 hl/ha.

ALCOHOL %
12.50%.

HARVEST
Machine harvest at night in order to prevent from oxidation.

VINIFICATION
Grape destemming, initial maceration at high temperature (30°C) for better tannins and colour extraction, 5 days fermentation and then 22 days maceration at 26-28 degree C with daily pumping over . Only first press juice is blended with the free run wine.

AGEING AND BLENDING
50% of the blend has been aged in oak barrels (20% new barrels, 80% 1 to 3 year old barrels) for 8 months.
The rest of the blend is aged stainless steel vats.

TASTING NOTES
Color : bright deep purple.
Nose : Black current jam, spices, cherry aromas, toasted and oaky notes.
Palate : Round with fine but present tannins which give a good structure, remarkable length.

SERVING TEMPERATURE
Best served at 17° C with grilled meats, sausages, veal stews and cheeses.
