Vin de Pays d'Oc

SITUATION
Domaine Astruc consists of 50 hectares on the "Coteaux Limouxin" of which 11 hectares are within the Limoux Appellation d'Origine Controlee and the other 39 hectares within the Vin de Pays d'Oc Appellation. The estate is planted with Chardonnay, Mauzac, Chenin, Viognier, Sauvignon, Cabernet, Merlot, Syrah, Pinot Noir and Malbec. It has built its reputation thanks to its unique soils and climate. Since 1802, Domaine Astruc has been renowned for the quality of its wines.

TERROIR
Clay and limestone with gravels locally.

VINEYARD
48 ha of vines aged from 10 to 16 years of age lying on the Limoux hills, south orientated.
12 ha CHARDONNAY.

AVERAGE YIELD
55 hl/ha.

VINIFICATION
The grapes are not crushed before going into the wine press.
Juice selection is done for the press out- cold settling of the juice
- For some of the grapes, low fermentation in oak at low temperature, for the rest the alcoholic fermentation is done on fine lees at 16°C - malolactic fermentation not finished.

AGEING
100% oak barrel ageing (1/3 of the barrels are 2 years old et 2/3 are 3 years old) for the end of the alcoholic fermentation and until end of May.

TASTING NOTES
Light pale gold, intense nose of white flowers and dry fruits (nuts), with persistent notes of toasted bread.
A complex wine with good aromas.
Best served at 10°C.
Ideal with shellfish or as an aperitive.
