SITUATION
Domaine Astruc consists of 50 hectares on the "Coteaux Limouxin" of which 11 hectares are within the Limoux Appellation d'Origine Controlée and the other 39 hectares within the Vin de Pays d'Oc Appellation. The estate is planted with Chardonnay, Mauzac, Chenin, Viognier, Sauvignon, Cabernet, Merlot, Syrah, Pinot Noir and Malbec. It has built its reputation thanks to its unique soils and climate. Since 1802, Domaine Astruc has been renowned for the quality of its wines.

SOIL & VINEYARD
Limestone and chalk with gravels and clay.
20 years old vines.

BLEND
100% Cabernet sauvignon.

AVERAGE YIELD
56 Hl per hectare.

VINIFICATION
Destemming of the grape, fermentation for 5 days at 30 degree Celsius the first 2 days and then at 28 degree Celsius. 1 pumping over per day during fermentation. 22 days, skin contact maceration at 20 degree Celsius.
We vinified the whole Cabernet Sauvignon in 10 different vats.
After the end of the malolactic fermentation in November, a blend of the different vats of Cabernet Sauvignon is done, and we rate 4 different styles of wine.
The best lot is put into barrel for ageing and the second one in stainless steel vats.

AGEING
75% have been aged 8 months in stainless steel vats.
The 25% remaining are aged for 7 months in 1 and 2 years old oak barrels 80% French oak, 20% American oak.

TASTING NOTES
Colour: Deep purple with garnet red tints.
Nose: Quintessence of mocha and black berries flavours, especially black current under wood and toasted aromas.
Mouth: Full body, soft tannins, ripped fruit flavours on the middle palate with a good structure and persistence.

FOOD & WINE
16°-18°Celsius with red meat barbecued, baked beef, stews, pasta dishes, hard cheeses and chocolate cake.
