AOC Limoux
 SITUATION
Domaine Astruc consists of 50 hectares on the "Coteaux Limouxin" of which 11 hectares are within the Limoux Appellation d'Origine Controlee and the other 39 hectares within the Vin de Pays d'Oc Appellation. The estate is planted with Chardonnay, Mauzac, Chenin, Viognier, Sauvignon, Cabernet, Merlot, Syrah, Pinot Noir and Malbec. It has built its reputation thanks to its unique soils and climate. Since 1802, Domaine Astruc has been renowned for the quality of its wines.
SOIL :
Clay and limestone with gravels.
VINEYARD :
South Orientation
11 ha 50 CHARDONNAY.
4 ha 15 MAUZAC
AVERAGE YIELD :
45 hl/ha.
HARVEST / VINIFICATION :
The grapes are picked by hand. No skin maceration and pressing with Bucher pneumatic press.
Juice selection is done at the press out
- cold settling of the juice
- slow fermentation in oak at low temperature (16°)
- malolactic fermentation is partly done (60%).
AGEING :
The wine is aged in oak barrels (1/3 of the barrels are new oak and 2/3 are 2 years old) at the end of the alcoholic fermentation until May.
TASTING NOTES :
Gold colour, intense and complex nose of brioche, nut and pineapple, together with lime-tree and quince aromas.
Light but full bodied, rich, remarkable length in the mouth.
This wine has character and can be drunk anytime in the day.
Ideal at 10°C with fish, seafood, shellfish.
Also excellent with cheese: goat, old cantal. Will also suit perfectly with foie gras.
